It never occurred to me that I would be 38, broke ass and working as a cashier in a bakery in the piddly little town of Madison Heights, MI. I had two masters from the University of Michigan and a BMW then in the span of forty eight hours I lost my job in Florida, had my first real life crisis and had NO idea how to put my life back together, but it starts with someone nice not being a jerk for once and saying, hey the local bakery is hiring, go apply for a job. Thank God my Mom, my Aunt and my Gram were all good cooks and I paid attention and had home ec. class in sixth grade. I love to cook, and I can stretch a dollar a looooooooooong way with flour, eggs, oil, sugar, rice and beans. Throw in a can or two of tuna and a bag of frozen spinach you can eat for two weeks. Gotta' love the Asian market where you can get a duck egg for forty cents and noodles for sixty five cents, that's dinner for a dollar. This is a cookbook of recipes I've invented over the years, a little of this a little of that, some days you just force yourself to get up, eat breakfast and shower and apply for jobs. It's hard when nothing in life seems the same, but the recipes are still there, and you are still hungry and the store still sells yogurt. When your life seems to be falling apart there is comfort in a familiar dish, in the smell of cooking onions and the quiet process of assembling a meal that you will enjoy. Be kind to your ingredients, you may not have enough money to buy more. When you find yourself in a moment of Red Hot Mess, take comfort knowing you are not alone, and eat an enchilada.
